HERE'S YOUR CHANCE--RECIPES

I don't know about you, but I am running out of ideas for a quick simple dinner.
I am open for any and all, quick (about 30 minutes) and simple meals. No matter how hard I try, I seem to get into a rut and it is do overs all the time.
Please feel free to share any suggestions and guys, please tell us gals, what you would like to see once in awhile.
One of my husbands favorites is fajitas, beef or chicken.

First:
Cut into strips either your beef or chicken or both and marinate while getting everything else ready. A good marinade is using 1/2 italian dressing and 1/2 lime juice. I have worked in restaurants using this, it is good.

While marinating meat.
cut into strips, one whole green pepper
and one whole sweet onion

This looks like alot, but it cooks up

Then using a little olive oil procede to cook veggies for a bit, then add the meat mixture, after the veggies become tender, juice and all. All over a med high heat.

cook until past tender and starting to brown, to bring out the best flavor.

finishing up with warming your flour tortillas in a skillet and

roll mixture up into them and serve with cheddar cheese and sour cream on them.

I use refried beans as the side dish, (great for our chloresterol)
They make great leftovers for a quickie lunch too.

I'm not much on recipes myself, but I'll ask Sara Jean when I get home if she has any "quickies" she can share.

Don't know if you have a Sam's or Costco there in the middle of the ocean, but here they are selling Salmon in vacuum packs that is "smack your Grandma" good!
One variety that is my favorite is the "blackened" version......makes my taste buds perk up just thinkin' about it!

I WILL share my favorite recipe, and it is for the best Peanut Butter Cookies you ever ate:

"AUNT VIOLETTE'S PEANUT BUTTER COOKIES"
1 Cup Peanut Butter
1 Cup Sugar
1 Egg

Use the oiliest peanut butter you can find.......dry PB like Peter Pan...the cookies won't hold together when they're baked.
Mix above ingredients together and bake at 350 degrees until they are irresistible.

I don't have any receipes right now for you, but you two have made me sooooo hungry! I'm checking my cupboards for oily peanut butter & sugar...yummy!

Hoosier Boy has limited eating habits, or he's miserable. So my idea of fun, quick dinner meals: GOING OUT!!!

GB: I'm getting some "smack my Grandma" salmon from Sam's. I've seen it there and just didn't trust it. But with your recommendation, I'm going "fishing at Sam's". Thanks for the tip!

I found this recipe on another blog, and since you're lookin' for quick and easy.....
Are you familiar with Yakitori?



Yakitori – a traditional Japanese appetizer, roughly translates as grilled bird. Chunks of marinated chicken roasted on skewers over a BBQ.

This recipe is so easy it’s almost embarrassing (your guests don't have to know this as they rave about it).

- Cut chicken into irregular pieces to fit bamboo skewers.
- Marinate for 1/2 HOUR ONLY* in:

1 part soy sauce

0.5 parts sake

0.5 parts mirin (sweet rice wine for cooking)

1 part aka miso (red soybean paste)

- Place on skewers and roast over a direct heat source, turning occasionally to ensure all sides cook evenly.

That’s it. Feel free to adjust or add to the marinade, it’s a great starting point to explore further. As a bonus, this marinade is killer with beef too, just double the marination time.

*Important - do not exceed recommended marination time, this stuff has serious mojo and will overpower anything.

This sounds so good, we actually have sake in the cupboard, my friend from Japan keeps sending me some. I have beef strips ready to go also.
We have any kind of food you could possibly think of here. A true melting pot of cultures.
Keep those ideas coming, I am enjoying them so much.

Okay, here's what we're having tonight:

Chicken Salad Pitas
* Nuke 2-4 chicken breasts, dice
(You can use chicken in a can too but we like it cooked better
* Lots of chopped celery
* Lots of seedless grapes, halved
* A couple or three red apples, diced (spritz and toss them with lemon or orange juice to keep them from getting brown)
* A couple of handfuls of chopped walnuts
* Salt, pepper and mayo to taste

Put it in a hot whole-grain pita pocket and call it good-to-go. It’s got protein, veggies, fruit and whole grain. Follow it with ice cream and that adds calcium. It’s a healthy meal,,, sort of.

Got another pita meal...

thin strips of beef enough for each person
1 whole zuccini, sliced down the middle and then sliced
1 whole large onion sliced into strips
saute in large skillet with small amount of olive oil
season with s & P and parsley flakes
saute down until starting to brown then add one whole diced tomato
when ready to serve in pitas
season with lots of grated parmesan
cheese and serve in whole wheat pitas.
